Description
Our raw honey has never been warmed to clarify it, so for most of the season it is sold crystallized in the jar. Depending on the nectar source of the honey, and when it was pulled from the hives, the extent of crystallization varies from jar to jar. Some of our jars of raw honey have crystals visible on the side of the jar. This is a natural function of crystallization. You can always liquefy your raw honey by placing it in a warm water bath, but be careful not to heat it too much, as the viscosity, taste, and colour of honey can all be damaged by too much heat. Enzymes are also destroyed when honey is heated. A couple generations ago, when honey used to be sold in pails, some instructions on the tins instructed that to decrystallize honey, give it a hot water bath no hotter than your hand can stand.
